History of Beef Jerky

Origins of beef jerky, also known as biltong, comes from the days of ocean exploration.  The Spanish ships kept goats on board in their travels, and they would breed throughout the voyages.  These goats were kept for food, and every now-and-then there would be goat meat that would be left over.  This meat could not be eaten.  The sailors would cut the meat into strips, and hang it out to dry on the rigging of the ship.  This dried goat meat was called "charqui".

Eventually, the Spanish found the America's, and so too they found that native Americans were also knowledgeable in meat drying techniques of their own which was quite similar to the Spanish methods.  The natives termed the dried meat "jerky" by using the Spanish word "charqui" and adding their own accent.
