Western AustraliaCarol ObrienProduction Manager, Western Australia Carol OBrien was born in Kalgoorlie, Western Australia and has resided in Perth the majority of her life. Carols working life has been spent mainly in Personal Assistant/Administration roles in various businesses including film and video, mine site catering and administration, insurance and recruitment. Approximately one year ago Carol discovered the world of beef jerky and started producing and experimenting with beef jerky at home for family and friends. Carol was approached by interested parties to commence a business producing beef jerky and CHOICE Beef Jerky was founded. Carol studied and gained a HACCP Certificate in 2003, and has succesfully implemented her skills to ensure that our premises are HACCP approved in line with the standards required by the Health Department and is currently applying her skills into obtaining facilities and resources for export purposes. Carol has dedicated herself to produce the best tasting beef jerky possible and is at present experimenting with other flavours including chili and teriyaki for an ever growing market in Western Australia as well as Queensland and New South Wales.
